SCALLOP CRUDO WITH WATERMELON JUICE, HORSERADISH, AND PICKLED ROSE PETALS
Il Rose di Casanova, Casanova della Spinetta [MWO], 2024
From the vineyard where Donnachadh once worked, this rosé is a blend of 50% Sangiovese and 50% Prugnolo Gentile. Harvested from 20-year-old vines in Terricciola (300m elevation, southern exposure) with sandy, ocean-sediment soils. Grapes are destemmed, with part of the fruit gently pressed and given a one-hour skin maceration (including free-run juice). Fermented over 10 days, then aged on lees for three months exclusively in stainless steel.

Chardonnay ‘Estate,’ Donnachadh, 2020
Whole clusters pressed by foot treading, fermented in neutral oak, and aged on lees in French oak barrels for 11 months (20% new oak). Elegant, balanced, and expressive with 13% ABV.

100% Gamay Noir (Clone 284, Block 10) from own-rooted vines in Sta. Rita Hills AVA. Only 86 cases produced. Fresh, vibrant, and layered at 13.5% ABV.
SWORDFISH STEAK AU POIVRE WITH MUSHROOM RAGOUT
Pinot Noir ‘Sta. Rita Hills,’ Donnachadh, 2022
100% Pinot Noir from Sta. Rita Hills AVA, crafted with 10% whole cluster fermentation. Aged on lees for 10 months (6% new oak). Silky and refined, with 13.4% ABV.
